Berbere is the classic chili-spice mix which is a basic ingredient in Ethiopian
cooking. It has spices in it which are indicative of the early influence of Indians
such as cardamom, cumin, coriander, fenugreek, black peppercorns, nigella,
nutmeg, cloves, cinnamon, and allspice. For heat and complexity paprika and hot
red chili powder are added. Added to the spices are onion, garlic, gingerroot, red
wine, and oil.
