Sambal is one of the most indicative foods of Indonesian cooking. It is a paste,
similar to Thai curry pastes or Indian wet masalas. Its ingredients are shallots,
garlic, gingerroot, candlenuts or macadamia nuts, and oil. Sambal Goreng is a
spice paste stew. It has a few more ingredients added to the sambal (spice paste)
such as tamarind, coriander, and red chilies. In the stew the protein is usually
chicken, cooked with coconut milk and vegetables.
