See text figure 11-2, page 209 for full diagram. Item is tested, if passes quality requirement, the impact on product mix is then examined. If no negative impact, the item can then be added to menu. If negative impact, reevaluate or drop item.

Managers must establish the level of product quality expected by their targetcustomers. They then must purchase the products that will meet this qualitylevel. Regardless of the quality level chosen as appropriate by managers, theirguests must receive good value for the prices they pay. Service levels must behigh. When they are, guest satisfaction levels will be high, and those guestswill return again and again. If an establishment does not deliver qualityproducts that are consistent with guest expectations, most guests simplywill not return.
