Extra Virgin Olive Oil comes from the first pressing of the olive squeezed at room temperature. The oil has a fruity flavor and the lowest acidity level of any of the olive oils.
Virgin Olive Oil this is the oil that is left during the first pressing, but does not qualify for the best of the batch, which is the extra virgin olive oil.
Pure Olive Oil also comes form the first pressing but with Grade B olives. It has a less fruity flavor and higher acid content. This is the type of olive oil that is most consumed by Americans.
