Answer to Question 1

When fruit is bruised, the tissues within rupture and tears develop in the skin. This allows bacteria to enter and grow, which hastens the spoilage of the food.

Answer to Question 2

The goals of preserving food, in addition to storage, include:

1 . Maintaining the initial flavor
2 . Maintaining the initial odor
3 . Maintaining the initial appearance
4 . Maintaining the nutritive value
5 . Making the food convenient for consumers to purchase and prepare
