Answer to Question 1

As a minimum, restaurant managers should desire the type of information required to perform selected revenue analysis indicators as discussed in this chapter. Further desired information can relate to sales data on a per menu item basis (number of items sold and revenue generated), revenue generated per server, expected food cost based upon the number of each menu item sold, and revenue generated per hour (to help develop employee schedules). Note: if possible, contact the local POS supplier and ask if he/she can provide a copy of the POS operator's manual that indicates the (almost) endless amount of information that can be generated.
