Action of bile salts in emulsifying fats in the intestine
Previous Image | Next Image
Description: Cholic acid, a typical bile acid, ionizes to give its cognate bile salt.

The hydrophobic surface of the bile salt molecule associates with triacylglycerol, and several such complexes aggregate to form a micelle.

The polar surface of the bile salts faces outward, allowing the micelle to associate with pancreatic lipase/colipase.

Hydrolytic action of this enzyme frees the fatty acids to associate in a much smaller micelle that can be absorbed through the intestinal mucosa.
