Description: (a) The wheat grain kernel has three parts: the bran, germ, and endosperm. (b) Whole-wheat flour is made using the entire grain kernel. It is not enriched. (c) Enriched wheat flour doesn't contain the bran and germ, so it is missing nutrients and phytochemicals. Some nutrients, including folic acid, thiamin, niacin, riboflavin, and iron, are added back to the flour during an enrichment process. (d) Wheat flour that is not enriched lacks not only the bran and germ, but also many nutrients and phytochemicals.
