Shale produces slate. Limestone produces marble. Very high-grade metamorphism of shale, or high-grade metamorphism of granite produces gneiss.

Answer to Question 2

Stability: the tendency of a mineral to remain the same rather than to change. Mineral stability usually varies with different temperatures and pressures, and can change to another mineral under different conditions. Aragonite can metamorphose to calcite at low pressures, and calcite metamorphoses to aragonite at high pressure. An extreme example is the diamond, which metamorphoses at very high pressures (>25 kbars).
