Answer to Question 1

The room temperature should be five to ten degrees cooler prior to guests' arrival so that when guests arrive and temperature increases the room is still at a comfortable temperature.

Answer to Question 2

Table numbers or names are used when the customer requests assigned seating for guests. This is often the case for functions that may have distinguished guests who would need to be seated near a head table or speaker podium. Also for events that sell tickets, whereby a group of individuals or a business may purchase tickets for a complete table. The table numbers or names are printed on cards and placed in the center of the table or clipped to a centerpiece.
