Answer to Question 1

The choice of dinnerware should be banquet weight, which is lighter than the traditional dinnerware and thus more comfortable to handle. White color dinnerware fits all decors

and is traditionally used, although the right dinnerware can increase the perceived value

of the meal, a menu, theme, and dcor as well as the customer's preference.

Answer to Question 2

The server needs to be very familiar with the menu in order to guide and help the guest in making a selection. The server needs to know important details about each and every item on the menufor example, the method of preparation, the major ingredients, and when and if substitutions are allowed. Furthermore, the server should know how to pronounce all of the words on the menu and be able to interpret them for their guest.
