Table turnover is low, check average is high. Dishes should be made with high quality ingredients  actual preparation may be simple or complicated. Overall, must ensure that customers appreciate the price-value relationship. Must consider all aspects (food/ atmosphere/ service.

Chain operations must be concerned with maintaining standards throughout  this may mean that menu items have to be adjusted and made less authentic in order to achieve consistency. Independent operations rely heavily on skilled staff to deliver quality product.
