Motivation is concerned with three factors: what energizes behavior, what channels such
behavior, and the conditions under which this behavior is maintained. The characteristics of the
job environment, in this instance the kitchen, and the characteristics of the chef supervisor
(particular disposition and leadership style) will affect the elements of motivation. The more the
chef supervisor understands the kitchen team member's behavior, the better he or she should be
able to influence that behavior and make it more consistent with the goals of the foodservice
organization. Since quality and productivity are central to the success of the chef supervisor, the
creation of the appropriate are central to the success of the chef supervisor, the creation of the
appropriate motivational environment in the kitchen is key to this success.

Change is driven by the team's response to the customer and the goal of getting it right the first
time. It is the result of continuous improvement. Any one individual or group in an organization
does not set the pace of change. The pace is the outgrowth of collaborative effort to achieve
customer satisfaction.
