Question 2

Again, think about food operations you've observed on college campuses, especially where there have been branded stations or operations like a Starbucks or a Chick-Fil-A.

Why don't you usually find such retail brands in all-you-care-to-eat dining halls?

Answer to Question 1

A

Answer to Question 2

Try to explore some of the conflicts that can arise relative to branded operations' price, quality and service when it is compared to a dining hall operation ? Ask students how they perceive differences in value based on the perceptions that may have been influenced by advertising, familiarity and other factors.

Ask students to discuss whether they would trade per meal profit or margin for popularity or customer satisfaction, and under which circumstances. Get them to explore how an inability to modify a branded concept's menu might affect the ability to make it relevant at different times of day.
