For an example of a code of conduct for 1. an ecotraveler refer to the American Museum of Natural History's Center for Biodiversity and Conservation guidelines and the World Tourism Organization's Global Code of Ethics for Tourism, both detailed in the chapter; and 2. a tour operator refer to AITO (Association of Independent Tour Operators) guidelines presented in the

chapter as well as Green Globe 21 or National Geographic Center for Sustainable Tourism Destinations.

The French influence stemmed from the 19th century contributions of Marie-Antoine Careme and George August Escoffier who created new dishes, systems of restaurant service, and cooking techniques.
