Repeatedly using fat to fry foods at high temperatures produces high levels of polycyclic hydrocarbons, which increase cancer risk considerably. Some foods are considered genotoxic, such as the nitrosamines and nitrous indoles found in preserved meats and pickled, salted foods. Vegetables, fruits, fiber, folate, and calcium may be protective against cancer.
