Client with celiac disease often have nutritional imbalance, including anemia and vitamin deficiencies; impaired absorption of fluids and electrolyte which leads to diarrhea and fluid imbalance; and pain related to abdominal bloating and cramping. Constipation is not a normal manifestation of celiac disease.

Appropriate interventions for the school nurse to implement include teaching the children with celiac disease about gluten-free, low-fat food choices. The nurse would also implement the labeling of gluten-free food choices in the school lunch program to aid the children in choosing foods to eat while at school. Food selections should be high in calories and protein. Celiac disease cannot be prevented.
