There are many instances where people are more concerned with fairness than with what makes the most rational sense. The text provides the example of peak services such as barber rates on weekends or other busy times. As a people we resist the notion that we should have to pay more during these times, even though we can understand on a rational level that those appointments are more valuable because there is more demand. However, this violates our notions of fairness in that the same service should cost the same price regardless of when it is rendered.
