Answer to Question 1

Sprigs of variegated English holly are added to the top of the centerpiece; each one
should be 4 to 5 inches long and cover the top of the floral foam block.

Answer to Question 2

Floral foam (OASIS) is used as a base and to hold moisture for the greenery. Before
using, soak it in a pan of water until there are no longer any air bubbles coming out of
the floral foam. This ensures that it is thoroughly saturated. Greens are then inserted
into the foam as needed for the arrangement design

Early clockmakers apparently thought that the IIII balanced out the VIII (used for the number 8) on the clock face and that it just looked better.
