Answer to Question 1

Trappist Ales can only be legally applied to a brewery operated by the Trappist monks. Trappist Ales are strong beers with a high amount of alcohol (710 percent) and many are bottle conditioned. This style of beer originated and is still currently made in Belgium and Dutch monasteries. Trappist beers are brewed under the approval and control of the Trappist monks.

The purpose of this question is to allow students to consider the specific steps they would take in the very common situation in which inventory shortages are occurring in a food service operation.

While the steps students may identify to help stop or minimize the incident of employee theft will no doubt vary, they are likely to include the following:

Avoiding excessive inventory levels

Moving products from receiving to storage areas immediately upon delivery

Implementing specific and enhanced control procedures for high-value products such as alcohol, steaks and seafood

Strictly limiting or eliminating non-employee access to storage areas

Implementing policies that carefully, but legally, assist the operation in monitoring employee packages and bags upon employees' departure from the operation

Assigning two individuals, rather than one, to count physical inventories when that task is undertaken
