As discussed earlier, the head plays a vital role in a professionally poured beer for many reasons. Can you identify its significance not only in appearance and aroma/flavor, but also as a variable to cost control?

The head is the technical term for the layer of creamy foam that forms at the top of a beer once it has been poured into a drinking vessel. The head is not only a definite psychological aesthetic; it's also a textural (mouthfeel) benefit. Additionally, it acts as a catalyst for dispersing the aromatic nuances associated with the beer's personality. An adequate head can also lessen the amount of beer used to fill up a drinking vessel. Therefore if inadequately poured, beer costs can increase.
