The two criteria used to determine which items will be test marketed for a quick service operation are:
 
  a. those items which have a high gross profit and will bring in new customers.
  b. those items that are created by management and have a high gross profit.
  c. those items that have a high gross profit and are labor saving.
  d. those items that the competition is serving successfully and will bring in new customers.

Question 2

To realize speed, any item placed on a quick service menu must involve certain criteria with exception of:
