Spherification is accomplished by mixing fruit or vegetable juices and purees with sodium alginate, then immersing this mixture in a water and calcium chloride bath. The result is the forming of perfect round spheres. A thin skin is formed on the outside of the sphere; and, when eaten, the membrane crunches and an intensively flavored liquid is released.
