Answer to Question 1

Nixtamalization is an ingenious method for treating corn that was developed by the
Olmec and Mayan cultures. By soaking corn in wood ash or calcium hydroxide
(chemical lime) it both softens the corn making it easier to grind to make masa it
also increases its nutrient qualities by improving the bio-availability of protein and
amino acids. It also decreases significantly the disease pellagra which can be
contracted when mostly corn is eaten.
