The influence of Senegal and West Africa on Caribbean, Mexican, and American
Southern cuisine is a result of slave trade. Slaves were exported from West Africa
over hundreds of years to the Caribbean, Mexico, and the United States. Those
slaves brought watermelon, black-eyed peas, kidney beans, peanuts, and okra to
the New World where they were embraced into those cuisines. In addition to
ingredients the cooking techniques of Senegal and West Africa migrated with the
slaves to the New World.
