Answer to Question 1

Couscous is both a product from grain and a complex dish which has the grain
product couscous as its primary ingredient. Couscous is made from semolina
flour. Traditionally, this is hand-prepared in Morocco. Water is sprinkled over
semolina flour and mixed until a dry paste is formed. This is rolled around and
around to form small balls of dough. As the rolling proceeds more flour is added
to keep the balls separate. Those balls are then sifted through a screen so that they
are all approximately the same shape and size. These balls are then spread and
dried in the sun. In cooking, the couscous is prepared through steaming.

The menu should be very moderate in price, have popularly accepted items and a children's menu should be included.
