The premier soup of Georgia is Kharcho. It is a meat and herb mixture that has a sharp
ingredient added to it for pungency. The main ingredients are beef, lamb, or chicken
mixed with bones and flavorings to make a rich broth. Typically an apricot puree is
added to the soup as a thickener and to give a unique taste. This is done by re-hydrating
fruit leather or using apricot jam and pureeing it. It has butter, onions, garlic, salt, rice,
and lemon juice which are cooked and then the first ingredients (meat and broth, apricot
puree) are added to this mix.
