A masala is a spice mix that is the basis of most Indian savory dishes, especially soups and
stews. A dry masala would commonly be referred to as curry powder. The common
ingredients used in curry powder are turmeric, coriander, cardamom, cumin, cinnamon,
fennel, nigella, fenugreek, mustard seeds, and cayenne. These items can be toasted, or
not, but are best when ground from whole spices. In the south of India a wet masala is
more common than the dry version, like curry powder. A wet masala is a paste that has
fresh vegetables mashed together in a spicy paste.
