In general, senders are consciously attentive only to the spoken word. Individuals often
communicate without using words. This is referred to as nonverbal communication or body
language. Elements of nonverbal communication include gestures such as nodding of the head,
use of hands, and facial expressions. All of these send messages. Smiling and frowning convey
emotion, as does voice intonation or loudness. Ideally, the right nonverbal cues accompany
verbal communication. Nonverbal communication may influence the impact of a message more
than verbal communication alone.

The meanings of gestures and movements vary from culture to culture. Communication scholars
agree that nonverbal communication is most successful between people of similar cultural
characteristics. When these characteristics differ, communication barriers occur. Nonverbal
gestures that would not be considered offensive in some cultures may be insulting to team
members from other cultures.

The chef should be aware of the gestures and body language used as well as the signals sent with
such gestures. Many cues may be picked up from nonverbal body language that will indicate
when communication will be most effective. These aspects of nonverbal communication are
expressed through facial gestures, posture, orientation, hang gestures, eye contact, and
appearance.
