Answer to Question 1

You can overwrite a label's text immediately after creating it, by entering the text you want and pressing Enter twice, or clicking away from the label. To edit a label after it is created, make sure the Select or Text tool is active, double-click the label, and enter the desired text.

Answer to Question 2

To change all labels, set the font and size you want in the Model Info window, Text page. Then click Select all text and Update selected text. To update only some labels, select them manually in advance, then click Update selected text.
