These operations are part of the Quick Service segment and therefore demand a limited and quickly prepared menu. They must ensure quick delivery time despite bursts of business followed by lulls in traffic. Customers will tend to prefer non-healthy items, however must cater to those who want healthy and/or upscale food items. In addition, guests may want regional favorites. Finally, packaging must be considered for ease of service, handling and minimization of trash.
