There are numerous difference in the food of India from the north to the south. It begins
with the influences on the development of the cuisine. North India was settled by the
Moghuls from Persia who brought saffron, cream, nuts, dried fruits, substantial meats in
the cooking, and the clay pot which became the tandoor. South India traded with
Southeast Asia which lead to spicier food using more tropical fruits, coconut, and greater
incorporation of vegetables into the dishes. So, the first difference between the north and
the south are the cultural influences from those who travelled to each area. A second
difference is in the type of masalas, or spice mixes in each area. The north is famous for
dry masalas with roasted spices, similar to what is called curry powder. In the south the
use of a wet masala is common, in fact, it is the primary spicing technique. It is usually a
combination of gingerroot, onions, garlic, tamarind, and coconut.
