Answer to Question 1

In the process of freeze-drying, the product is quickly frozen and placed in a chamber where a vacuum is drawn. This chamber removes a great deal of air, which causes the atmospheric pressure inside to drop so that water will boil well below the freezing point. This allows the water molecules to go almost directly from ice to vapor.

Answer to Question 2

In addition to the heat of the fire driving out the moisture, the smoke adds an additional coating of particles to the meat, which helps limit the actions of enzymes.
