Have you ever seen this phenomenon in the milk you have at home? Under
  what circumstances did it occur? What are some other characteristics of milk
  that has undergone this separation of fat and water?

Answer to Question 1

Student answers will vary. Milk that is very old will separate out in this manner. This
milk will also have a strong sour odor.



Answer to Question 2

The vinegar acts to reverse the process of homogenization, allowing the fat globules
to collect and rise to the top of the milk.
