Answer to Question 1

Mechanical refrigeration begins to cool it even during milking, from 90 to 50oF within the first hour and from 50 to 40oF within the next hour. As more milk is added, the blended liquid must not rise above 45oF. Milk is stored in insulated or refrigerated silo type tanks that maintain a 40oF temperature. After milk is pasteurized and homogenized it is again cooled in a heat exchanger

Answer to Question 2

The refrigeration system is extracting heat from the storage vessel. This would be preferably done during an off-peak period. If this were a water storage system, then the water would be cooled. For an ice storage system, ice would be formed.
