The meat sample is cooked by the method selected. The direction of the grain of the meat is determined. Using the specific size corer provided, take a core with a careful, twisting motion. Make a sampling plan for the exact location of the cores (should be at least duplicates) from each sample. Place the core through the opening in the metal triangle. The force required to shear the meat is an indication of the meat tenderness.
