Inversion is increased when
 
  (1) cooking time is short, (2) invertase is added prior to cooking, (3) cooking time is long, (4) 1 and 2, (5) 2 and 3.

Question 2

In canning, either the hot or cold pack can be used. The cold pack fruits and vegetables tend to float above the bottom of the jar. What part of the plant cell structure causes this?
