Flat beater - creaming, mixing cake mixes and batters; Dough hook - kneading yeast doughs; Wire whip - incorporating air; Pastry knife - cutting fat into flour; Wire wing whip - incorporating air

trays are stacked so that hot and cold sections of each tray work together in a column to maintain proper temperature
