When pricing a banquet, catered event, or buffet, what are the factors considered?

What will be an ideal response?

Question 2

Some restaurant managers require all cash handling employees to submit to a criminal background check before they're considered for employment.

Would you do this? Would the length of time between the crime and the employment decision influence your decision to hire, or not to hire, the potential employee? Why?

Answer to Question 1

The pricing for a banquet, catered event, or buffet is based upon several factors which include the following:

The type of foodservice operation (restaurant, hotel, resort, or club): Upper Priced which is the finest food and beverage selections with superb service and elegant accessory details in a highly rated property. Mid Pricedrepresents most banquet, catered events, and buffets, where the food, beverage, service, and accessory details are carefully chosen and professionally presented. Budget Pricedwhere the food, beverage, and service choices are limited to the dollar amount that the customer can afford to spend.

The reputation of the restaurant, hotel, resort, or club. When a high level of quality

and service is performed that consistently meets customers expectations, then the

property's reputation commands a higher price.

Answer to Question 2

A criminal background check is probably required for cash handlers who will be bonded, and this chapter discussed the advantages of obtaining this insurance for cash-handling staff members. Restaurant managers might talk to applicable insurance representatives to determine whether length of time between the crime and employment decision suggests that employees will not continue to steal.
