Answer to Question 1

Approximate guest count is an estimate of the number of people attending the event. It must initially be determined in order to plan the details and identify the costs. Several days before the scheduled event, the customer will authorize a guaranteed number. Guaranteed guest count attending which is the minimum number that the customer is committed to pay for. If it is a large event that involves special ordered items, such as a wedding cake, then a week or more advance notice would be required.
Confirmed guest count is the confirmed number of guests served which may be more or less than the guaranteed number, but the customer is responsible for paying for whichever is greater, the guaranteed or the confirmed number of guests.
