The four main influences on Caribbean cuisine are: 1 . the Amerindians, 2 . Europe,
3 . Africa, and 4 . India and China. These influences cover the history and
development of the Caribbean islands. The indigenous cultures that existed before
any people came from the east cultivated corn, sweet potatoes, and beans; used a
variety of the tropical fruits, and were believed to have created barbacoa
(barbecue). The Europeans brought Old World foods and cooking techniques such
as domesticated animals, citrus, onions, garlic, and sugarcane. African slaves
were brought to the islands to work in the sugarcane fields and brought Africa
foods and specialties such as watermelon, callalo, yams, and foo-foo. When slave
trade was abolished indentured servants were brought from India and China. They
added chutneys, curries, flatbreads, and stir-fry dishes.
