AOC stands for Appelation d'Origine Controlee which is a quality control system
used in France for wines. This system oversees and approves specific grape
varieties and wine-making practices for specific geographic areas. AOC also
represents the highest of the four designations for wine grading. It is the most
tightly controlled and takes into account the vineyard areas, grape yields,
varietals, blends of varietals, alcohol content, and bottling. The bottles will show
the geographic designation.

there have been many who contributed to the development of modern French
cuisine. Some of the most influential were Francois Pierre de la Varenne (17th
Century), Marie Antoine Careme (early 19th Century), Auguste Escoffier (late 19th

Century).
