Two fermented Japanese soy products are soy sauce and miso. Miso is a paste that
is used for salad dressings, sauces, and primarily soups. It is made by inoculating
steamed soybeans and grains with koji bacteria, blended with salt and water, then
aged in cedar vats. To create the various types and colors (red, yellow, white,
brown, black), requires the use of different grains, times, temperatures, and
pressures.
