Answer to Question 1

Labor cost includes payroll cost, the employer's contribution to FICA and Medicare, workers' compensation insurance, and employee benefits. It is also important to distinguish that payroll cost is the gross (pay before taxes are deducted), not net, total of employee paychecks. Adding payroll costs, employer's FICA contribution, employer's Medicare contribution, and the costs associated with employee benefits gives managers the total labor cost.

Answer to Question 2

An interview is a conversation or verbal interaction between two people (in this case, the chef
supervisor and the applicant) to evaluate compatibility for a particular reason. It is a process for
choosing the applicant who is most suited for the team position to be filled. The interview has
three main purposes:

 To validate previously submitted information
To discover the skills and attitudes necessary to achieve neatness of fit
within the kitchen team
To predict the successful integration of the applicant into the foodservice
organization's environment
