Answer to Question 1

Factors contributing to the fluctuations in F&B revenue appear to be a direct result of the decline in occupancy. The subject property may have also altered the available options within the F&B program. Have students calculate and analyze the revenue for each F&B department per occupied room. Between 2006 and 2009, the F&B revenue POR remains relatively consistent despite the massive drop in total revenue. In the hotel industry, F&B revenue is typically analyzed on a POR basis.
