Iron is difficult for the body to release and so it can build up to harmful levels. High iron levels can cause oxidative damage to the tissues, which can increase inflammation and decrease their ability to function. Also, infectious bacteria can thrive in the presence of high levels of iron. Thus, the body uses several mechanisms to regulate the amount of iron that is absorbed from the diet.
