Obesity is becoming a health crisis of epidemic proportions both nationally and globally. As such, the dramatic shift from undernutrition to overnutrition or unbalanced nutrition that often occurs as a society transitions to a more industrialized economy-referred to as the nutrition transition-is strongly related to many of the chronic degenerative diseases facing humankind today.
