Which minerals play a role in providing antioxidant
  protection/activity? Where possible, explain the mineral's
  antioxidant activities and list one other function of the
  mineral.

Copper is a component of the antioxidant enzyme
superoxide dismutase. Copper is also is required in the
synthesis of collagen and norepinephrine. Selenium is a
component of certain selenoproteins that have antioxidant
activity, and is a cofactor for an antioxidant enzyme.
Manganese is also important for glucose production and
bone formation. Zinc is a component of an antioxidant
enzyme, and also plays a role in regulating gene expression.
Therefore zinc is important in protein synthesis, cell
maturation, growth, and immune function.
