This is no longer thought to be true. Starchy foods that contain less fiber and are more refined such as potatoes, refined cereal products, white bread, and white rice have higher glycemic indices than many simple carbohydrates. Simple carbohydrates are rapidly absorbed but their effect on glucose response can be less than that of starches with higher glycemic indices.
