Some supplements may have minerals at levels that may interfere with the absorption of other minerals that the body needs as well. For example, excess iron from a supplement may interfere with copper absorption. Though copper is needed at lower levels, it is still needed for hemoglobin production, as a coenzyme, and in collagen maintenance. Foods tend to have minerals or nutrients available in balanced proportions such that no one nutrient will overrun the absorption mechanisms in the small intestine.
Fiber from foods can also help slow down the absorption of glucose into the blood which will reduce blood sugar spikes. Fiber may also enhance the health of the colon and may reduce the levels of LDL cholesterol in the blood.
